Production of Langres and Epoisses cheese, retail sales.
A speciality of our region, recognised as an Appellation d'Origine Contrôlée, Langres cheese is made according to old traditional recipes. Its orange-yellow rind shelters a light yellow paste, with a moderate taste that becomes stronger with age. The top of the cheese is hollowed out by a bowl called a "fontaine". This particularity, which can be compared to the shape of the ramparts surrounding the town of Langres, gives it its characteristic appearance.
